Plum rules or plum and polenta cake
My husband is trying to prepare a plum cake for dessert today and he is using a recipe he found in the Australian newspaper by David Herbert and the title of it is Plum Rules . Some of the ingredients are : polenta (cornmeal), almond meal (ground almonds instead of flour, which is sold cheaper in the ALDI supermarket) and light olive oil, with ground cardamon as the spice. I insisted on him greasing the pan with oil then adding flour, so it does not stick to the pan.
We published a recipe by this author and it was called Tomato Galette with Basil Dressing and it was very light and perfect for our vegetarian diet.

I have never tried polenta but I use ground almonds and coconut flour in my cooking these days, where I can. I love plums

Polenta is very nice with cheese and tomato. You should look up the Jamie Oliver recipes although the Italians like to prepare it too!
