Tomato Galette with basil dressing

Today I’m helping my son do some meditation, for his TAFE homework. It was very interesting and I think I will either read the book that was recommended, or otherwise I will visit the website for the book. The book was called Mindfulness: an 8-week plan for finding peace in a frantic world, by Mark Williams and Danny Penman.

We did one part today and the speaker had a very clear voice, so it was easy listening to him. Chris will not be here with us in the eight weeks, but I can still do it on my own.

Its midday now and he is preparing a pizza looking dish that his father found in the Australian newspaper a few days ago.

In the afternoon they will probably go to Salamander Bay to visit Telstar as yesterday, they bought my son’s birthday present, but they did not include his old handy number, as he wanted, but created a new number. He needs the old number, as that is the one Jet Star uses to communicate flight information to clients.

In the afternoon my son will also prepare a banana bread, which he likes very much, so he already has the very ripe bananas waiting for it. I was surprised how light the dish he prepared for lunch was, beautiful! It was called “Tomato galette wish basil dressing”.

My wife has made this in a skillet a long time ago. Her mother in fact also liked it. I never tried it. Now am curious and will ask her to make some in the next week or sooner. Yumm.

We started a new vegetarian diet a few days ago and this dish was perfect for it, as it was so light!
