Totally Different Meal!

Please Feed The Children
Today is one of my childminding days for two of my grandchildren and my daughter texted me during the morning to ask me to prepare a meal for the two girls for 4pm, because the elder one goes to a drama class at 5pm and she didn't want her to feel sick moving around soon after her dinner.
He Doesn't Like Casserole
My son-in-law doesn't like casserole dishes or any dish with the meat cooked in gravy. He will eat it if put in front of him but it's not his preferred food, so I was only cooking for the children, who LOVE gravy and casserole. On the other hand, it's nice to have food ready and waiting for you when you come in from work!
Coconut and Paprika Chicken Casserole
I made the vegetables first because I was going to put it in the slow cooker and vegetables take longer to cook in that, so onion, garlic, ginger, bay leaf and carrots were fried gently in coconut oil, and salt and pepper, added and put into the slow cooker. I added some water and set it on high. I then cut 3 chicken breasts into strips and coated them in cornflour, with salt, pepper, paprika and turmeric added and fried in coconut oil to lightly brown the outside. I added those to the slow cooker and left it on high. (the chicken was prepared rather like chicken goujons)
They Came Home Early
They texted to say they were on their way, as my daughter can work at home doing marking, so I didn't bother putting any potatoes on for the girls, as their dad is good at making food. She slipped upstairs, so the children wouldn't see her, so she could finish marking and their dad came in to look after them. I told him the chicken was cooked, though the carrots might take a little longer. But the girls had just had some bread and honey, so I didn't think they would be hungry. My daughter texted from upstairs to ask me to come and talk to her.
Already Eating
When I came down again a few minutes later, the three of them were eating already. The girls had pieces of chicken on their plates, they didn't want the veg because they were not that hungry, and my son in law had taken a left over half loaf of Italian bread from the local bakery, split it in half and toasted it and put chicken strips inside. He had that on his plate with salad from the bag in the fridge. So he turned a casserole into a LARGE chicken sandwich and salad! It looked tasty.

Chicken! I enjoy chicken several ways: 1. Chicken and Stuffing casserole, 2. Chicken with Dumplings, 3. Chicken Fricassee, 4. Chicken Pot Pie, 5. Fried Chicken.

That's a lot of work for a grandmother and a mother in law too. They indeed are fortunate that they get to eat home cooked food.

Yes, he is good at cooking but he makes things totally different from my type of cooking but they are still nutritious and tasty.

Your food sounded delicious. I liked that snack of bread and honey I used to do that after school when I was younger too. Loved it!!!!
