My pickled green tomatos

I have just taste my first pickled green tomato for this year and my husband firts in his life and they are absolutely great. In my country pickles of every kind are very popular, and every year almost every person makes them. This year i have made pickled cucumbers and green tomatoes soon sauerkraut. But this tomatoes this year came out better then i believed they will do. Usually we make them late September beginning of October when you still have some tomatoes in your garden that are not ripe. They go with almost any food depends on every person taste and it is very natural. The recipe goes like this for a 5 liter jar:

-for every liter of water one spoon of curing salt

-10 peppercorns

-2-3 bay leaves

-a small twig of cherry with 2 leaves on it

-1 horseradish, and 2 horseradish leaves

-1 carrot

- 1 small red cabbage cut in 4

- 3 garlic cloves

- 2 green peppers

First you boil the water (i needed 2 Liters of water) with the salt, peppercorns, bay leaves. After the salt has dissolved stop the fire and let it cool a little. In that time take the jar and arrange (press them a little) your design with the green tomatoes, the red cabbage cut in four, that carrot clean from skin, garlic, horseradish(cut in strips) and green peppers washed and cleaned for seeds (i used red because i run out of green), on top put the cherry twig and the horseradish leaves. Optional you can add a small twig of dry dill. After all it's put in and you like your design put the water over, slow it is still hot. Close the jar and if you want to try them faster then normal put them in a warm place, if not put them in your pantry and wait. In a warm place, in maxim 2 weeks they will be done, if not it can take at least month or more depending on the temperature. Enjoy your pickles

I have never pickled green tomatoes. That would be good to try, usually when we have excess garden green tomatoes, my husband and I will make fried green tomatoes, have you ever tried that?

I dont like tomatoes but might try that for hubby next year. Our tomatoes are all gone now

I don't think I've ever had pickled tomatoes, but I would probably like them. I like pickled corn pretty well.

I have Polish and German friends, so these are not new for me. I also shop in an Eastern European store not far from me, so I buy pickled foods.
I also make my own pickled beet root, carrots, cucumbers. Comes from my Scandinavian background, I think.
