Olive Farm in Broken Hill!

My photo shows you all of the trees behind this fence are olive trees where the olives are grown using organic principles.

Broken Hill is a mining town and therefore at the mercy of the elements but no chemicals are used.

With the harsh conditions the trees do vary in size and I watched some die from the first planting but they did not give up and are now doing well.

The first trees were planted in 2004 and in 2008 produced their first crop.

The business is selling Premium Extra Virgin Olive Oil and is owned by locals.

They have even won some awards for their products.

Olive oil is almost all I use for cooking these days, except for a bit of coconut oil sometimes.
