Coconut Rice
Indian cuisine is always flavorful and spicy. But there are some exceptions in it too. Coconut-rice is one of them ,even though less spicy it is delicious. Here is the recipe
Boiled Rice - 1 cup
Grated coconut - 1 cup
Thinly sliced shallots - 3
Red chilly - 3-4
Curry Leaves - 2 spring
Mustard seed - 1 tablespoon
Split Black Gram - 1 tablespoon
Oil - 1 tablespoon
Asafoetida - 1 teaspoon
Salt - as per the taste
Add oil in a hot pan. Add mustard seed , when it splutters add split black gram seed.
When it is brown in color add curry leaves, red chilly and shallots.
Saute till the shallots start to change the color.
Add the grated coconut and asafoetida powder, saute until the coconut is light brown in color.
Switch of the stove and add this above mixture to boiled rice. Also add salt as required.
Mix well and enjoy the tasty coconut rice. Add cilantro if required.
We usually have this coconut rice as a main dish in our lunch along with Indian style spicy-potato-fry

That sounds very tasty. I have all those ingredients except for the split black gram. I will have to print this out and try it. I have an Indian man visiting today so maybe it will get tried today.

You should try it. it is easy and tasty. Split black gram is an optional ingredient. It gives a crunch to rice. you can very well skip it.
