Yes, it's true. I came, I saw, I conquered ... with vinegar. No, I'm not talking about cleaning the windows with vinegar. Or the floors. Or any other such household chore, because face it ... cleaning house is the pits.
So ... you ask ... what did I conquer with vinegar? Boiled potatoes for potato salad! Yes, friends, you too can add vinegar to water when you boil potatoes. It will give your recipe a flavor that the Queen of Sheba would feel was worthy of her palate!
Or was that Julius Caesar that ate a lot? On second thought (or maybe third), I'm thinking it was the chubby dude who fiddled while Rome burned. He would have loved my newest version of potato salad.
All joshin' aside ... if you've never done it, give it a try the next time you make potato salad. Add a glug or two or three of vinegar to the water before you boil the potatoes. I used apple cider vinegar, but next time I plan to try red wine vinegar. The potatoes do have a more firm texture, but the extra flavor is great.
(How about it ... have you ever added vinegar to the water when boiling potatoes?)
