A new use for green salad

Last week my husband decided that it was warm enough for salad.

So he bought a bag of green salad, some ham, some new potatoes, coleslaw and cottage cheese to make up a salad meal for us.

Today I realised that the last of the green was still sitting in the fridge. We had already bought a new bag and were planning on opening it tonight for our latest salad. So when I was making up my smoothie earlier, I tossed in the salad as well as

So my for tomorrow contains added lettuce, onion, carrot and cabbage as well as all the fruits.

It may not be as thick as some of the smoothies I've made, but I can almost guarantee it has my five a day right there.

I often toss salad mix, especially if it contains some spinach, in with warm pasta, maybe some pre-cooked chicken and cheese. I try not to throw any thing out if it hasn't gone bad.

I should eat salad more often. I did buy a head of lettuce for sandwiches, at least! I think "hiding" it in a smoothie is a great idea emoticon :smile:

My husband never eats cold salad, but he will cook spinach leaves with meat and other veggies. Adding it to pasta s a good idea--I usually add some peas or broccoli, but certainly any veggies are good with it!

I don't do a lot of smoothies, as I prefer to eat my fruit and veg most of the time. But I'd totally eat that combination of foods!

Tonight's mix for tomorrow's lunch is beetroot and ginger with watermelon. The store has started to sell smoothie mixes on the reduced to clear shelves for a dollar the pot so I am well into that at the moment. Much cheaper than going for a sandwich or fast food! I love my veggies but try getting me to eat fruit...Eton Mess or fruit crumble is about as far as I'll go.
