A Veritable Feast

My usual ‘Sunday lunch’ of late is a hotdog sandwich with cheese and tomato ketchup. Simple, quick and easy.
I bought some new rolls last week, they’re shop’s own brand but called ‘big bite’ so they’re, yes, bigger. Normally my husband is the roll eater, and I prefer pitta bread or sandwich thins, but we decided to try a pack of these yesterday and there was one left in the fridge, so I co-opted it for my hotdogs.
By the time I’d added a slice of Applewood cheddar and the last of the peas and beans from supper last night, I had a proper feast on my hands. That should at least keep my cold busy for a few hours and allow me to concentrate on my overtime and writing opportunities.
I always enjoy scratch meals, they’re the best way I know to liven up a regular menu, and now it seems my tendencies have spread to my lunches as well. Bring on the summer rice salads, I reckon. Avocado in rice salad with peas, corn, peppers and cucumber sounds utterly delicious to me.

My personal chef always has a surprise in store for me at mealtimes. Sometimes the 'surprise' is the phrase 'get it yourself'!

It's not said with any malice but usually because she has other commitments outside our home. My favourite kitchen utensil is the tin opener!

& WordChazer - Those rice salads sound good! I am a lazy cook most of the time now - I improvise with leftovers all week!
