You Guys missed a good Dinner

If you had been at my house for tonight, you would have enjoyed Parmesan encrusted pork chops, rice pilaf, and fresh tomato slices. It was quite good, even if I do say so myself. It was quick and easy too.

I tried a different pork chop like this once, but they did not turn out very well. This one had a nice crispy, golden brown coating, with just a touch of Parmesan flavor coming through, and the coating helped keep the chops moist inside. Just dip the chops in the cheese, then some egg, then bread crumbs, and fry in a small amount of oil for a few minutes on each side.

The rice, well I cheated a little. I made packaged rice pilaf and then added some butter and garlic. I figure it's not that much different from instant rice, and doctoring that up, so why not. The pork chops weren't going to take very long, so I wanted something quick for side dishes.

That's where the sliced tomatoes came in too. My husband was getting hungry, so I wanted a good meal that wouldn't take a long time to prepare. Besides, he loves tomatoes.

Pretty good for a main course made from a quick and easy !

We had baked chicken breast and rice with gravy for dinner a little while ago.

That sounds good too. I enjoy slow roasted chicken, which I make with a spice mixture I found that makes it taste like rotisserie chicken. I'm always good with having rice.

We had pork chops and rice tonight also, but I cubed mine and fried them in a teraki seasoning then made gravy with the oil to go over everything
