Updated Freezer List and Recipe Challenge

I am proud of myself. I decided to update my freezer list by going through the list and striking-through the items that are no longer on the list. I have also altered (in red) the amounts that I have changed of things that were multiples. It is a striking (pun intended) comparison to what I started with nine days ago.
I am pleased to have gotten through more things, shared what I had in abundance, and am able to make it much more manageable for me.
I made a small casserole of a jambalaya-style entree using a pint of clam chowder base (fresh clams, bacon, onions and celery), the rice, and adding a small can of tomato sauce, thyme, pepper and Worcestershire sauce. It's not like my regular jambalaya, but it will do for dinner tonight with a salad.
I have also thawed 3 smaller containers of stock and added the turkey. I will probably add a mirepoix, peas and corn, and then thicken the stock to make it a gravy to make it into a stew. If I can figure out how to use the puff pastry, it could become a turkey pot pie for tomorrow's dinner, with lunch leftovers.
It's exciting to see the freezer get cleared, know what is there, and to begin to look forward to eating things that have not been frozen so long. I am holding off on breaking out the newly purchased bangers or haggis until I have managed the other things. I can still probably eat through the summer based on what I have in stock!

I am glad it is working for you. Unfortunately I had to clean the freezers and do that this summer when one of my freezers died on me. So no surprises in there right now.

A lot of what's in my freezers is still mystery and one that needs to be cleared out - especially in the one I inherited as it was when my mother-in-law died while living in the mobile home on our property in 2004. There still may be a couple of things in it that old that I though I would use and never did. Imay also be a couple of things left in the freezer here from Mom's era, but most of that got tossed after the burglary last year.

My freezer's almost full now - and there's not a lot in it. Just 4 packs of mince, 1 pack of meatballs, 2 packs of sausages, 3 bags of vegetables, half a loaf of bread. Apart from those there are a few small items, but it's full. Now I need to work out what to do with them all - I get caught up with too much indecision! So many things I COULD make, that by the time I've decided I'm too hungry and just make toast :)

You must be a great cook. I am not into cooking but I am into eating a lot. Sometimes I cook but it is just when I am so hungry and my mom is out. Actually it is my mom who do all the cooking and grocery for that food. Thanks for sharing, your Jambalaya is more tasty just looking in your recipe. God bless.

It was the worst timing too, I was just starting to pick new green beans from the garden and at the same time had to can the frozen ones down to save them also.

Toast and eggs sounds good to me. I love food, but sometimes it is a matter of just having enough for me to get something in my gut without having to think too much. :)

I am a better cook when I have someone to share a meal with...the jambalaya is usually good. Last night's...not so much.
