Something was wrong with my meatloaf

I decided to make meatloaf today. It has been a while since I have made it but honestly over the last 40 years I have made a lot of meatloaf. This is the first time that I really ever blew it. How can you mess up meatloaf? Pretty easy it turns out if you don't put in the breadcrumbs.

I make a recipe called Susan's Meatloaf. I have made the same one for so many years that I never use a recipe anymore. I take about two pounds of ground beef, chop half a large green pepper and a medium size onion, add a tablespoon of horseradish and a few squirts of ketchup. I mix it with my hands then place it in a stone loaf pan and cover the top with more ketchup. What I forgot was about a cup of seasoned breadcrumbs. I cook it at 375 for about an hour.

First, I have to say, the meatloaf tasted fine but it just didn't hold together very well. It was then that I realized I had forgotten something. I guess that is what happens when you think you know a recipe and you don't even have to think about it. Evidently, I do need to think about it in the future.

I have never made meatloaf but cakes, got 3 failures throughout my baking time. What a waste

I don't, of course, make meatloaf. I do, however, tend not to follow recipes. I just throw things together, and dishes tend to be made based on what I have on hand. Things turn out fairly well. The worst I've done recently is make a couple of dishes a bit blander than I personally like due to needing to restock my stash of spices, and even those weren't actually bad-- just not spice-filled enough for me.

I was going to say "oh trust me, I can mess up meat loaf!" - lol because I don't know how to cook. Well, at least it tasted ok. Could have been worse I suppose.

I made a cake at the weekend and forgot to put the sugar in! So I can see how easily this can happen. It has never happened to me before.

I made a cake in a rush to take to a friend's lunch party and knew as soon as I tasted it there was something missing, it turned out I hadnĀ“t added any oil to the mixture. Easily done in a rush.

When I bake I always use a recipe but for many other things I just do ht or miss and I do get more hits than misses but I do know how important it is to have all the spices needed. :)

lol Yes the breadcrumbs don't add much in the way of taste, they are more about texture. :)

So true and we are all rushing all the time aren't we. I am feeling much better now that I know I am not alone. lol :)
