Brown Rice Couscous
I needed a quick side dish to bring to a Fiber Circle (knitting/crochet/Spinning) group that I belong to here in town. So I whipped up this sweet and savory Brown Rice Couscous with cranberries, apples and walnuts. This gluten free dish actually surprised me with how good it turned out. One of my “need a meal quick” invention. I’m so glad I thought to write down the recipe as I was making it!
Brown Rice Couscous
Ingredients:
1 – Box of Brown Rice Couscous
1 – Box of Veggie Stock – Rachel Ray’s
¼ - White Onion – chopped into small pieces
¼ - Yellow Bell Pepper – chopped into small pieces
2 – Tablespoons – Coconut Oil
¼ - Cup - Dried Cranberries
¼ - Cup – Walnuts – chopped
1 – Gala Apple – cored and chopped, I did not peel mine
1 – Tablespoon – Brown Sugar
Pinch – Salt, Pepper, Garlic, Cumin, Cinnamon
Cook couscous according to package but use ½ water and ½ veggie stock. Sautee onions and yellow peppers in coconut oil, add seasoning and 1 cup of stock, cook on low for 15 minutes. Add couscous, cranberries, walnuts, sugar, apples and heat through. Spoon into serving dish and you’re out the door in no time with a great dish!

That looks good. I have had couscous but it was white and I had that a long time ago. I never thought about it being brown.

Tina, do you have any ideas for a gluten-free turkey stuffing that cooks outside the bird? I'm only going to reheat a precooked turkey breast this year. I'm also wondering how to make a good gravy if I don't cook a turkey. Any ideas? This recipe seemed it might work in stead of a stuffing, but I'm not sure what Couscous is. I do want a savory stuffing, though.

in our region, Ilocandia, we still grow brown rice which we called "ballatinaw", and this kind of rice is healthier because it is usually planted in the mountainous area and without the pesticides and fertilizers

This would work well for stuffing! For traditional, well my southern traditional stuffing. Make gluten free corn bread using of course the cornmeal, but use gluten free flour and some gluten free bread crumbs. Sautee some celery, carrots in some butter or coconut oil, mix with cornbread mixture using turkey or chicken stock, enough for moisture season with sage and poultry seasoning, salt and pepper. Cook in a pan. I will post the full recipe for you soon.
