Chicken and Rice

This was one of those quick; I need to cook dinner meals in our house last night! So back in the cupboard I had a box of Rice A Roni and decided to add some seasoning and some leftover chicken breast from the previous night’s dinner. Serve with my Garden Fresh Green Beans (recipe * here * ) and some fresh sliced tomatoes.

I was unable to eat this as it’s not gluten free , so my husband has decided to give you his review of the Chicken and Rice.

Review by Hubby: Rice was cooked to perfection and the seasoning of the rice and the flavor of the chicken was well balanced. Neither flavor took over the other as you could taste the rice and the grilled chicken. The grilled flavor of the chicken complemented the rice and the seasonings that were added. I look forward to this dish being made again!

Hmmm…. I wonder what would happen if he gave me a bad review!!

Chicken and Rice


1 – Box of Regular Rice A Roni

3 – Tablespoons of Coconut Oil

¼ Cup Chopped Onions

1 – Garlic Clove minced

1 – Tablespoon of Spinach and Herb Seasoning

1 – Cup of Chicken Breast Chopped – Last night’s leftovers.

Fix rice according to package except I used coconut oil and added the garlic and onions while the rice browns. I also added the tablespoon of spinach and herb seasoning and used half of the package of seasoning they provided. Once rice is cooked add the chicken and cook to warm it through.

Chicken and rice is a great stand-by. Could you do a gluten-free version? I don't have a gluten allergy but I know people that would be interested :)

Yes, normally I do, but my husband likes the Rice A Roni version at times. On those nights I eat the veggies and salad instead.

Tina, this same recipe could be used with any rice once it's been cooked, yes? I mean, to have a gluten-free version of it?

Is spinach and herb seasoning something you buy or is it something you make? We are also supposed to be gluten-free, but it's optional for us and we cheat.

Yes it can! I used the Rice A Roni because it was quick and it's what the hubby wanted for dinner.

I get it from Tastefully Simple and it's gluten free. I don't have a choice, I have such a high sensitivity to it, that when I eat I get really sick.
